Best. Pancakes. Ever.

Carrot Pancakes

1/4 cup dried currants
1 Tbsp butter
2 carrots, peeled and grated to make about 2/3 cup lightly packed
1/3 cup shredded coconut (unsweetened if you can find it)
1 1/2 cup all-purpose flour
2 tsp baking powder
3/4 tsp ground cinnamon
1/4 tsp ground ginger
1/3 cup sugar
1 cup milk
1 1/2 eggs
1 tsp vanilla extract

Take the dried currants and soak them in a bit of hot water to moisten them. Drain the currants and then toss together with the carrot and coconut.

Melt the butter; reserve.

In a large bowl, whisk together flour, baking powder, salt, spices and sugar. In another bowl, whisk together milk, eggs, and vanilla. Pour the liquid ingredients over the dry ingredients and stir until just combined. Stir in the carrot mixture, and then mix in the melted butter.

I tend to be a wordy person (plus it's late and there has been a lot of personal emotional charge surrounding this issue for me)...but I'll try my best to be brief.

I'm about to graduate with my B.S. in Neuroscience and my plan right now is to go to med school and study psychiatry. Problem is, I think what I really want to do is to get a phd and to do research -

BUT

I am also trying to be realistic. I know that someday (God knows when someday will be) I will want to have a family and have kids. And I'm sure that when I do, my children will be priority over my job.

I know that I want to be a research scientist. I know that I want to be a mother someday. In your opinion, are these things mutually exclusive? I've heard it's "possible but difficult" - but I've been internet searching on moms, scientists, etc (this is how I came across your blog) and I figured I'd ask your opinion now that a year has gone by since you've had Bean.

And by the way she is precious!!! :) and...so much for being brief. lol...

Oh and...I'm a runner too!! :)
